The Good Food Institute is offering big bucks to encourage universities and others to pursue plant-based and clean meat research. Sound appetizing? Institute leaders hope universities will sink their teeth into the offer; the group estimates that less thanĀ 0.3% of the world’s universities are trying to create the next great meat substitute.

What do they mean by plant-based and clean meat? What’s unclean about a good ol’ hamburger or steak?

“Plant-based and clean meat are efficient and environmentally sustainable,” says Erin Rees Clayton, Ph.D., GFI‘s scientific foundations liaison. “They are also better for human health, good for animals and also solve the farm animal antibiotics problem.”

Plant-based meat products are structured plant- (or mushroom-) derived foods designed to replace animal-based meat either as stand-alone products or within recipes, Clayton explains. The institute defines plant-based meat as a food product that directly replaces animal meat – including poultry, fish, and shellfish – and that is marketed as a meat substitute.

Rather than growing muscle tissue inside live animals (generally housed in “crowded and filthy conditions”), clean meat producers take a few animal cells and use a mixture of nutrients to grow those cells into a piece of meat in a clean facility, Clayton says. “As a result, we get pure meat, the production of which doesn’t require antibiotics, doesn’t require slaughter, and doesn’t suffer from fecal E. coli, salmonella, or other contamination.”

The $3 million competitive research grant will be awarded to projects “to advance knowledge within the fields of plant-based and clean meat,” according to a news release. More information is online at www.gfi.org/ResearchGrants. Proposals must be submitted by Nov. 21, and award recipients will be announced by January 2019.

The institute hopes that clean meat will someday just be called “meat,” the same way as test tube babies are now just called babies. Apparently, ice created via artificial refrigeration was once called “fake ice” by providers of natural ice from frozen ponds.

Is clean meat the clean energy of food? Like using wind and solar instead of burning coal, it would be better for the planet. Studies point to how producing livestock for human consumption drives habitat loss, deforestation, climate change and more.

Meat substitutes have spurred startups and investments from meat makers like Tyson. Federally funded research at the University of Missouri gave birth to the plant-based Beyond Meat company.

But there are more questions to answer, says Dr. David Welch, GFI’s director of science and technology, such as the best cell types and cell culture methods for clean meat production, which crops produce the best plant-based meats and which are best suited for growth in different regions of the world.

“Much of the scientific community is either unaware of the opportunities in plant-based and clean meat research or does not have access to adequate funding,” said Clayton.

The $3 million will come from a family of institute donors. “These generous donors wish to remain anonymous,” she said. “They are individuals not affiliated with any plant-based or clean meat companies.”

Instead of growing muscle tissue inside live animals (usually housed in “congested and dirty conditions”), tidy meat manufacturers take a couple of animal cells and utilize a mix of nutrients to grow those cells into a piece of meat in a tidy center, Clayton states. “As an outcome, we get pure meat, the production which does not need prescription antibiotics, does not need massacre, and does not experience fecal E. coli, salmonella, or other contamination.”
